Did I miss, somewhere in the options, a way to indicate knurling on lathed parts?

It's not yet in the user interface but we do knurling often. Just use Comments To Machinist.

Say, as a follow-up question... what different kinds of knurling (pattern and sizes?) do you guys have the capability of doing?

How do I create a knurled parallel line pattern to the edge of my part (See attached image) in eMachineShop CAD? Please provide a sample drawing if available.
